Decaffeinated using the innovative Mountain Water Process, developed by Descamex in Córdoba, Veracruz, this coffee undergoes a chemical-free caffeine removal process. Using pure water from Pico de Orizaba, this method ensures up to 99% of the caffeine is removed while preserving the vibrant flavour and aroma that make this coffee exceptional.

Café Capitan encompasses 24 vibrant communities in the VI Frailesca region and the Sierra Mariscal, within the majestic Sierra Madre de Chiapas. The farms benefit from the unique microclimates of the El Triunfo Biosphere Reserve, a sanctuary for biodiversity that supports both environmental conservation and the livelihoods of local communities.

Situated at elevations between 1,200 and 1,800 meters above sea level, these farms are cultivated using polyculture systems, offering not just outstanding coffee but also significant ecological, social, and economic contributions to the region.
