Ombligon
Ombligon is a newer coffee varietal, growing only in the Hulia region of Colombia and has been made famous by prominent producer Nestor Lasso's El Divisio farm and it's inclusion in Jack Simpson's 2023 World Barista Championship winning routine. It is available in only limited amounts each year, with numbers steady increasing as its popularity grows.
Process
Natural
Cherries are harvested by hand, sorted, and washed. They are then fermented in sealed bags for 80 hours, then dried on parabolic beds in a marquesina (a specialised drying marquee) designed to control airflow.

Jhon Wilmer is a young coffee grower that has continued his family's coffee legacy at their family finca, Las Brisas. Jhon took several courses at SENA and today helps his father to grow high quality coffee, accompanied by several fermentation processes and incorporating exotic varieties such as Gesha, Java, Ombligón, Aji, Pink Bourbon, among others.
